We got back from camping on Sunday and once we put everything up and unloaded our kitchen box for cleaning we weren’t into the idea of cooking a complicated dinner. Thank goodness we didn’t use up all the tomatoes during the weekend. I made a simple spaghetti, tomato and basil pasta dish.
Pasta with tomatoes, basil and garlic
Boil pasta until done. While it boils, chop a tomato or two and dump into a medium-sized bowl, add one clove of minced garlic and a handful of torn basil, season with salt and pepper. When the pasta is done drain it and add it to the boil. Drizzle a little olive oil on it, maybe a sprinkle of salt and toss. Enjoy.
