Camping Food

We’ve been eating basically the same thing for the last few camping trips.  I tried to mix it up a little bit this time and hopefully our next trip will be more focused on CSA stuff.  The fact that we have use of a campstove is opening up a number of options (like the burritos, I’m not brave enough to try that over a campfire).  I also really love our little camping tea kettle.

Thursday Dinner: cheat with take-out from nearby BBQ place we like

Friday Brunch: breakfast burritos with fried potatoes, green onions, eggs, chorizo, cheese and salsa

Friday Dinner: black bean-quinoa burritos (sauteed onion and garlic with cumin, 1 can beans, mostly drained and a few spoonfuls of quinoa-black bean salad served with pepper-jack cheese and cherry tomatoes -should have also had lettuce but forgot to prep it

Saturday Breakfast: fruit salad of banana, blueberries and strawberries with a squirt of lime juice

Saturday Brunch: breakfast burritos -repeat of above 

Saturday Dinner: roasted potato packs with potato, zucchini*, red bell pepper, garlic and grilled portabello caps

Sunday breakfast: egg sandwiches (fried eggs on toasted english muffins with cheddar cheese)

Drinks: water, soda, beer, OJ, scotch, hot tea and hot chocolate

Snacks: chips, nuts, cookies, cherries, bananas, blueberries, strawberries

We brought a lunch salad for each day but ended up not eating it.  Quinoa and black bean salad (1 c quinoa, 1 can black beans r&d, 1 cup frozen corn, 1 t. veggie boullion, green onion*, cilantro, 1/2 red bell pepper, 1/4 c red wine vingegar, 1/4 c oil, S&P, cumin, chipotle, chili powder, pinch oregano, dash garlic powder)

*zucchini was the sole CSA veggie that we took with us; I bought all the fruit at the Farmer’s Market the day before, well everything except the bananas
