Mmmm that looks good. This Food in Jars blog post has greatly influenced my breakfasts:
http://www.foodinjars.com/2009/06/12/breakfast-in-a-jar/

Not coincidentally, it's also helped me work through some jam, though I have plenty more to go. Like you, I also have fruit in my freezer, esp. about 3 pounds of sour cherries, which can NOT get too much more freezer-bitten in my crappy apartment freezer.

Using uncooked oats seemed weird to me at first but they soften up just fine in yogurt or milk. This summer I was eating them with frozen blueberries. hmmm perhaps I should document a few breakfasts and do my OWN blog post on this topic!

Oh no! Just don't scrap the bottom if it burned and add more water when you heat it up. Lentil soup likes to soak up the water and become much thicker once it has cooled.

All the water cooked out before 45 minutes. :-( Maybe I only put 4 cups of water instead of 5. I can't remember! I compensated with an extra can of tomatoes. When it comes to soup, I'm hopeless!

You know, I'm not sure if beet cupcakes are the best way to enjoy beets - but when you are looking for a new way to use some beets chocolate cupcakes are fun.

This cupcake looks divine. We eat a lot of beets here as my mother grows them in her garden but I'm not sure if there are any left. I've been impressed with a lot of your recipes lately, esp the lentil soup, but I thought you were vegan. I'm going to try the soup, the cupcakes and the fish tacos when I get a chance.

It turns out eggplant can be pretty darn easy. I would recommend using slightly less pasta or upping the sauce from 26 oz to 32 oz.

I used Tillamook Sharp Cheddar. It seemed like a lot of cheese at the time, but I didn't think the dish was overtly cheesy. I should dig up the other corn & tomato pie recipe I saw, it might have had guyere and was done free-form galette style.

Ooh that looks good. I've bookmarked it for lunch group cooking - I am a novice in the ways of eggplant.
